The cake you didn’t know you needed.

  • These are the cakes for the people who don’t like cake. An entremet is a layered mousse cake and made distinctive by the gloriously shiny and colourful glaze on the outside.

    They generally contain at least 3 layers of different flavours and textures, surrounded by mousse, and glazed in a shiny mirror glaze. The combination results a deliciously light cake that delights all of your senses and can be designed to suit any palate.

  • Entremets are assembled slightly differently to your usual buttercream style cakes.

    Firstly, the internal layers, called inserts, are made and placed into the freezer. Sometimes multiple layers are frozen together, for example a caramel may be frozen on top of a brownie layer. Sometimes each layer is frozen individually.

    Once all of the layers, usually around 3 or 4, are made and frozen, the cake is ready for final assembly. The mousse is made, placed into a silicone mould, and then the inserts are placed inside. More mousse is piped until the mould is full, and then the entire entremet is frozen.

    Once it is frozen, usually on the day of consumption, the cake is removed from the freezer and warm glaze is poured over the top while the entremet is still frozen. This is then plated, allowed to thaw slowly in the fridge, and then can be cut as normal and devoured!

  • The beautiful thing about entremets is their versatility.

    There are hundreds of combinations of flavours and textured inserts to be mixed and matched.

    As an example, you could select a chocolate mousse, a crème fraîche mousse, a raspberry mousse or a caramel mousse.

    For the inserts or layers you could choose a whipped vanilla caramel, a chocolate brownie, a crunchy chocolate wafer layer, or a passionfruit coulis.

    The glowing, reflective, irresistibly shiny outer glaze can be completely customised to your choice of colour and style. It can match party themes, work or corporate colours or simply your partner’s favourite colour.

    All of these things lead to a dessert that is your favourite combination of flavours, is decadent and delightful range of textures, creating the perfect bite each time.
